These Air Fryer Smashed Potatoes are going to be your new favourite side dish. I know it can seem like a bit of extra work to boil potatoes before roasting them but trust me, it’s worth it every time and it really is a small amount of effort to get an amazing result. These smashed potatoes are a speedier version of my beloved glass potatoes (they use much less oil too). I personally love to add a dollop of butter on top of each potato before it cooks for extra flavour, but feel free to give it a miss if you’re looking for something even healthier.

INGREDIENTS

You only need a few simple ingredients to make these smashed potatoes in the air fryer and I bet you already have them all on hand! Measurements are listed in the full recipe at the bottom of this post.

Potatoes - I’ve tried this with a few different types of potatoes and haven’t been let down. I personally love to use baby potatoes (I used the baby spud lite ones here in Australia). Just make sure you’re using a good roasting potato. If you’re unsure what good roasting potatoes are in your country, just google “best roasting potatoes” and it will give you suggestions to look for in the supermarket. Olive Oil - You could use another type of oil if you prefer but I think olive oil is perfect for potatoes. Butter - Use good butter. That’s my philosophy for everything that uses butter. Splurge for the best butter you can afford because it is always always worth it. I promise you I am the first person to cut costs wherever I can at the supermarket but butter is not the place for that. Salt - Sea salt or kosher salt will do the trick here.

INSTRUCTIONS

Here’s a quick breakdown of what you’ll need to do to prepare these potatoes. You’ll find the full instructions in the recipe at the bottom of the page.
Boil Potatoes - Cover potatoes with water in a saucepan then bring to boil. Cook until soft. Smash Potatoes - Drain potatoes and place on a large plate. Use the back of a spoon or a fork to press down on the top of the potatoes to crush slightly (aka “smash” the potatoes). Brush or spray some oil over each potato, add a small chunk of butter in the centre of each potato then generously salt.
Air Fry Potatoes - Carefully transfer your potatoes into your air fryer basket with a spatula, then cook on 200C / 400F for 20-25 minutes or until deeply golden and crispy.

Feel free to make more or less potatoes depending on how big your air fryer is. Just don’t overcrowd them in the basket, leave a little space between each potato.
