Looking for a summer salad that’s both hearty and delicious?  Try this Chickpea Avocado Salad!  It’s filled to the brim with healthy and fresh ingredients, including tomatoes, avocado, creamy feta cheese and plenty of chickpeas for a protein hit. This vegetarian salad is very easy to throw together making it a great addition to lunch or dinner at home.  It’s also a perfect side dish for BBQs, picnics and potlucks. The dressing is simple - extra virgin olive oil (EVOO) and lemon juice.  It lets the flavours of the dish shine without overpowering, but does add a lovely zing.  Make sure your EVOO is light flavoured and not too bitter - it’s worth paying a little extra for a quality bottle you can use in dressings for salads like this.

HOW TO MAKE CHICKPEA AVOCADO SALAD - STEP BY STEP

Place cucumber, tomatoes, chickpeas, avocado, red onion and feta cheese into a large bowl.  Season with salt and pepper, then pour olive oil and lemon juice over the top.  Toss the salad to combine.
