I couldn’t very well have made a two ingredient dough pretzel bites recipe without trying out a cinnamon sugar version now could I?  And boy am I glad I did! I have always loved cinnamon sugar pretzel bites (hello Auntie Annie’s) and this no yeast version stands up to the original in a big way. Be warned - these sweet bite-sized pretzels are highly addictive.  They’re also incredibly quick and easy to make with two ingredient dough. This means you can be enjoying a fresh batch straight out of the oven or the air fryer in under 20 minutes.  You’re welcome!

INGREDIENTS

Making these cinnamon sugar pretzel bites couldn’t be easier!  All you need is 5 ingredients (full measurements listed in the printable recipe card below)…

Greek YoghurtSelf-Raising Flour – Only have all purpose or plain flour on hand?  Just mix in 2 teaspoons of baking powder for every cup of flour you use.ButterCinnamon Granulated / White Sugar

INSTRUCTIONS

IN THE OVEN

Preheat the oven to 180C / 350F and line a baking tray with baking paper or a silicone mat. Place 1 cup of Greek yoghurt in a mixing bowl and give it a stir.  Then add in 1 cup of flour and mix to combine. At this point you’ll gradually add more flour into the bowl as you continue to mix until the dough holds together in a ball shape.  Usually this will be between ½ – ¾ of a cup more, but it is dependent on how wet your yoghurt was to start off with. Turn your ball of dough onto a well floured surface and knead until well combined.  If it’s still a little too sticky, continue to mix in flour until you reach the right consistency.  The dough should be able to hold its shape and not stick to your surface. Cut the dough into 4 even pieces.  Roll each piece out into a long rope shape, then cut each rope into equal bite-sized pieces.  I usually get 8 pieces per rope, 32 altogether. Place the pretzel bites on the prepared baking tray, then bake for 20 minutes, or until golden. Combine cinnamon and sugar in a bowl.  Brush the pretzel bites with melted butter, then dip the bites into the cinnamon sugar and toss to coat evenly.  Serve immediately.

IN THE AIR FRYER

Place 1 cup of Greek yoghurt in a mixing bowl and give it a stir.  Then add in 1 cup of flour and mix to combine. At this point you’ll gradually add more flour into the bowl as you continue to mix until the dough holds together in a ball shape.  Usually this will be between ½ – ¾ of a cup more, but it is dependent on how wet your yoghurt was to start off with. Turn your ball of dough onto a well floured surface and knead until well combined.  If it’s still a little too sticky, continue to mix in flour until you reach the right consistency.  The dough should be able to hold its shape and not stick to your surface. Cut the dough into 4 even pieces.  Roll each piece out into a long rope shape, then cut each rope into equal bite-sized pieces.  I usually get 8 pieces per rope, 32 altogether. Place the pretzel bites in the air fryer basket in a single layer.  If you have a smaller air fryer basket you’ll need to do in batches so they aren’t overlapping and can cook evenly.  Cook for 7-10 minutes on 180C / 350F, shaking the basket every few minutes, until golden brown. Combine cinnamon and sugar in a bowl.  Transfer the pretzel bites to a plate and brush with melted butter.  Dip the bites into the cinnamon sugar and toss to coat evenly.  Serve immediately.

TIPS FOR MAKING THIS RECIPE

You can use any type of Greek Yoghurt (low fat etc) but don’t substitute for plain as it isn’t thick enough for this recipe.  You’ll also want to make sure the Greek Yoghurt you use is thick and not runny.If you don’t have self-raising / self-rising flour on hand, substitute with all purpose / plain flour & baking powder (the conversion is 1 cup of flour to 2 teaspoons of baking powder).You want to work quickly with this dough.  Put it together, roll it out and cook it ASAP.If you want to get a deep golden brown colour on these pretzel bites, brush them with butter and cook them for an extra 2 mins or so.  Then brush with butter again and coat with cinnamon sugar.Feel free to use a store-bought cinnamon sugar blend if you have it.
