Is it even summer if you don’t enjoy copious amounts of frozen treats?  Homemade popsicles are SUPER easy to make and are much healthier than the store bought kind.  Plus they are just as if not more delicious so there’s no excuse not to make a batch! These Mango Popsicles are my new favourite.  A few simple ingredients give the popsicles a light and creamy taste.  The only problem you’ll have is stopping at just one.

How to freeze Mango pieces

While you can buy frozen packs of mango from the freezer aisle of major supermarkets, you can also grab some fresh mangoes while they are in season and freeze them yourself. Simply place diced mango pieces on a baking tray and flash freeze until solid (approx. 2 hours), then seal in a ziplock bag and freeze for up to 3 months.

How to Make Mango Popsicles - Step by Step

Place all ingredients in a high performance blender and blend on high until smooth, approximately 30-60 seconds (photos 1 & 2). Spoon mixture into popsicle moulds, then place in freezer overnight and enjoy once completely frozen.

How do you unstick popsicles?

Removing popsicles from their molds can sometimes be challenging.  I like to run the mold under some warm tap water, or even fill a container with warm water and dip the mold in that until the popsicle loosens.  It should be under the water for no more than 20-30 seconds, and should then slide out easily.

What if I don’t have a popsicle mold?

Most popsicle molds are super affordable, but if you’re wanting to make these popsicles straight away and don’t have a mold - never fear! Ice cube trays, muffin tins lined with foil cupcake wrappers, plastic cups or even small yoghurt containers can be easily fashioned into DIY popsicle molds. Once you fill your DIY mold with the popsicle mixture, freeze for an hour or so until the mixture starts to take shape and firm up.  Then stick popsicle sticks through and freeze until completely firm.  This ensures the popsicle stick stays in place.

STORAGE ADVICE

Leave popsicles in their moulds or move them to a ziplock bag and freeze up to a month.  But let’s be real here - there’s no way they’re lasting that long.

If you’re having difficulty using a spoon to pour the mixture into popsicle molds, try using a funnel. When you’re filling the popsicles molds, leave a small gap (approx ¼ inch) at the top to allow the mixture to expand as it freezes.
